Greek Yogurt Tzatziki
Yeeeeeesssssssssahhhh I love tzatziki.
I have made tzatziki a few times in the past, and my attempts have been so-so, but I think that I have now finally discovered the best tzatziki recipe known to man. It's sooooo good, and really easy too! I found this recipe on Food.com, and made it as an accompaniment to my spanakopitas for a recent Greek-themed Supper Club night.
It's seriously a must-try recipe! Do it!
Tzatziki
Ingredients
1 Long English cucumber
500 grams (a little over 2 cups) Greek non-fat 0% plain yogurt (Liberté is my absolute favourite)
Salt
3 - 4 garlic cloves, finely minced
1/3 cup olive oil
1 tbsp. red wine vinegar
2 tbsp. fresh minced dill
Directions
Peel cucumber, and grate using the 'small hole' side of a box grater. Salt lightly, and allow to drain for 5 minutes. After 5 minutes, use your hands to squeeze out any excess water.
Combine all ingredients together into a medium-sized bowl.
Cover, and let sit in the refrigerator for at least 2 - 3 hours.
Makes: About 3 cups
The Hubby's Review: He hasn't tried it yet because I ate it all with my girlfriends at Supper Club! They said it was delicious!!
